We grew our own Shitake mushrooms this year so I have come up with some wonderful new recipes to use them in. Today we’ve made a warm mushroom rice dish with a colourful pansy garnish. We bought some coconuts and opened them up and took the hard coconut out to use in a cookie recipe. We then put the coconut through our Champion Juicer using the blank solid screen to grind up the coconut into a fine crumble (it made about 3 cups).
