Slice and chop the following veggies: the mandolin makes slicing really easy, there are 3 blades; one for thin Julienne strips, one for thick slices and when reversed it makes thin slices, and one for thick strips (like French fires)

  • Carrots – Julienne
  • Cucumber – thick strips
  • Bell peppers – thick strips
  • Cabbage – Julienne (this becomes shredded)
  • Beets – Julienne

Take the wrap and place the veggies in the centre; drizzle with your favorite salad dressing then fold the wrap around them.

Wraps

: you can use many good things to act as your wrap in today’s recipe.

  • Making the flax crackers in 6” rounds letting them dehydrate only until they are dry but still bendable
  • Buy a good flax seed whole wheat tortilla wrap
  • Use the Chinese rice papers – these are made of only rice and water so when you dip them in hot water for a minute they become soft and easily wrap around your veggies, sealing them well
