Our Thanks to You,

Thanksgiving is the perfect time to recognize the things we are thankful for in our lives. Expressing our gratitude towards people, things or opportunities is strongly beneficial to both our mental and physical health.

It is important for us to appreciate the positives in our lives and to keep a positive emotional state to lead to further experiences that we are grateful for. Keeping lists focused on the things you are grateful for will help build your positive-focused thinking and enhance your well-being. Gratitude is also linked to lower levels of stress & anxiety and improves the relationships we have in our life. People who regularly practice gratitude tend to take better care of themselves and are healthier overall.

Tomato Bean Soup

Tomato Bean Soup

Soups are so easy to make when you use this simple outline, and I always use organic canned goods, Eden or Muir Glen are good brands because they are not only organic but salt & preservatives free.

The Soup

makes 4-6 servings
Sauté the following 3 ingredients until tender:

  • 2 tbsp coconut oil
  • ½ cup of each: thinly sliced celery & finely chopped onion
  • 2 cloves garlic minced

Add the following:

  • 1 cup thinly diced carrots
  • 2 cans organic white navy beans (rinsed well)
  • 4 cups organic tomato juice
  • 2 tbsp dried basil (rubbed into a fine powder)

Stir and simmer on med-low heat for 1-2 hours (you might have to add 1 cup water as needed)
Serve hot!
