Sweet Potato (Yam) Salad

This month we will be featuring Picnic Foods! Grab a blanket and your cooler bag and head to a park to enjoy the warm Summer months with these mouth-watering picnic recipes that will be featured all month long.

A Picnic is not a picnic without a potato salad – so here we have a Sweet Potato version with lots of raw veggies to compliment it and with a great Orange Citrus Dressing!

This salad taste best if made the day before and left to absorb the flavours. So boil your sweet potatoes (or yams) the day before you need the salad. Cut the potatoes into ½ inch cubes and boil just until tender.

Potato Salad

The Salad

serves 4

Put the following ingredients into a large bowl or do as I did and put right into a picnic container:

  • 1 medium sweet potato (yam) that has been boiled then drained and left to cool]
  • ½ cup fresh or frozen peas
  • ½ cup celery (thinly sliced)
  • ¼ cup of each: bell pepper & green onion (both thinly sliced)
  • 3-4 radishes (thinly sliced)

Toss with the following dressing and keep in the fridge overnight.

The Dressing

makes 1 cup

Put the following ingredients into your blender and process until creamy:

  • ½ cup extra virgin olive oil
  • ¼ cup fresh orange juice (this is about ½ of a large orange)
  • ½ tsp of each: cinnamon & cloves
  • ½ tsp sea salt to taste

When transporting your salads and dressing to a picnic make sure you use cold packs to keep everything nice and cool.
