Pomegranate/Red Pepper Kale Salad

Salad Ingredients

(serves 4-6 people)

Wash 4 cups baby Kale and put in a large salad bowl and add the following ingredients:

  • 1 cup red pepper diced
  • 1 cup diced celery
  • ½ cup mixed red & white quinoa (soaked overnight to soften)
  • 1 cup pomegranates

Toss well with the dressing below.

Dressing Ingredients

makes ½ cup to use more than once

  • 1 small clementine orange (peeled)
  • 3 tbsp. extra virgin olive oil
  • 1 tsp. of each: ginger & cinnamon
  • ¼ cup pomegranate juice
  • 1 tbsp. acai syrup

Mix well in your blender until creamy.

Add the dressing to the salad and toss just before serving.
