Salad Ingredients
(serves 4-6 people)
Wash 4 cups baby Kale and put in a large salad bowl and add the following ingredients:
- 1 cup red pepper diced
- 1 cup diced celery
- ½ cup mixed red & white quinoa (soaked overnight to soften)
- 1 cup pomegranates
Toss well with the dressing below.
Dressing Ingredients
makes ½ cup to use more than once
- 1 small clementine orange (peeled)
- 3 tbsp. extra virgin olive oil
- 1 tsp. of each: ginger & cinnamon
- ¼ cup pomegranate juice
- 1 tbsp. acai syrup
Mix well in your blender until creamy.
Add the dressing to the salad and toss just before serving.
