Pineapple Seed Cheese with Flowers

Pineapple Seed Cheese

When you garnish with flowers make sure they are edible (complete list of edible flowers here) and if you grow them yourself make sure you do not use chemicals so you can eat them! Stay away from these flowers when using them in your food: Poisonous plants and flowers

Here is a nice summer fruit seed cheese that will brighten up your picnics or backyard BBQ recipes! It can be served on flax crackers as we have done here or top a slice of cucumber.

Seed Cheese

makes 2 cups

Put the following ingredients in your food processor and blend until creamy:

  • 2 cups sunflower seeds (that have been soaked for 2-6 hours then drained)
  • 1 grapefruit juiced
  • 1 cup diced pineapple
  • ½ cup celery (I use the leafy tops)
  • 2 tbsp chives chopped
  • ¼ cup nutritional yeast
  • 2 tsp ginger powder (or 4-8 slices ginger root)

This will keep well for 3-4 days in the fridge.

Scoop out a spoonful of the seed cheese for each cracker then garnish with 1-2 mini petunias and a thin slice of pineapple.
