Raw Zucchini Spiral Pasta

Make fancy veggie noodles and salad creations at home with three fast and easy interchangeable blades! Raw Zucchini Spaghetti Recipe

You will need a Spiral Veggie Slicer to make this Raw Spaghetti Salad. It is best to use thick and short zucchini about 5” long and at least 1 1/2” thick.

The Raw Spaghetti

(1/2 medium zucchini for every person)

Using the spiral veggie slicer cut 2 zucchini into long strings.

Place them in a large bowl and put aside until ready to add the raw tomato sauce (I have used smaller individual bowls so each person can toss their own).

The Raw Tomato Sauce

makes 2 cups

Use a food processor to coarsely chop the following veggies:

  • 1/2 cup sun dried tomatoes (soaked in water for 1-2 hours)
  • 1/2 cup grape tomatoes (or 1 medium tomato)
  • 1/2 cup celery
  • 1/4 cup onion (diced)
  • 1 clove of garlic
  • 2 tsp of each: dried oregano & thyme
  • 1 tsp of each: sea salt & curry powder
  • 1 pinch of cayenne pepper
  • 2 tbsp apple cider vinegar

Scoop out about 1 1/2 cups of this sauce and place in the middle of the zucchini spirals. (if you have used individual bowls use 1/2 cup per person).

Garnish with the following:

  • 1/2 cup red bell peppers (finely chopped)
  • 1/4 cup sweet onion (finely chopped)

Serve raw as your main course.
