Salad:

Put the following in a salad bowl:

  • 3 large carrots, julienne (thinly sliced) using a mandolin
  • 1 cup jicama thinly sliced
  • ½ cup thinly chopped celery
  • 2 tbsp black sesame seeds

Toss this together with the salad dressing below and serve on a bed of greens.

Ginger Dressing:

Put the following in your blender:

  • 1 tbsp oil (extra virgin or sesame)
  • 1 clove garlic
  • 2 tsp soy sauce (naturally fermented)
  • 1 tbsp minced ginger root
  • ½ tsp cayenne

Blend on high until creamy and use with salad. Store in the fridge.
