Make the Flax Crusts the day before you need them and put them aside until you are ready to fill them with the pineapple cream mixture – they should be eaten within a few hours because the creamy mixture will make the flax crusts soggy. You need a Dehydrator to make these.
Flax Pizzas: these can be kept unfilled in a sealed container for many weeks in the freezer.
Soak following in a large bowl for ½ hour until it has absorbed the water:
- ½ cup of each: pumpkin & sunflower seeds
- 1 ½ cups freshly ground flax seed
- 2 cups water
Process the following in your food processor scraping the side so the mixture is well mixed:
- ½ cup of fresh pineapple
- 1 apple (chopped)
- ½ cup raisins or dates
- 1 tsp. of each: cinnamon and nutmeg
- ½ cup coconut
Add the nut/flax mixture and blend until well mixed. Spread this mixture onto a Paraflex sheet into 4” rounds about ½” thick – put into Dehydrator at 105F for 4-6 hours the flip onto the screen and place them back in the Dehydrator for another 2-3 hours until they are dry but still flexible.
Pineapple Creamed Filling: put the following in your food processor (or a blender can be used)
- 1 ripe avocados peeled and sliced
- 1 ripe bananas peeled and sliced
- ½ cup fresh pineapple (chopped)
- ½ cup unsweetened coconut
Blend until smooth – put in fridge before serving
Strawberry Jam: take 2 cups fresh or thawed strawberries and puree until a jam consistency. This can be kept in the fridge for up to a week. This can be done with any fresh fruit to make a variety of different raw jams
Assembling the Fruit Pizza: here are a couple of ideas but let the kids make their own choice.
1) Take the flax pizza crust and cover with a layer of thinly sliced bananas then cover with the raw fruit jam.
2) Cover with the pineapple creamed mixture then sprinkle with coconut
