Emergency Creations

During the winter months there are Snow days when we cannot travel with safety and you need to make up something to eat from what you have in your fridge and pantry.

Last week we had a few days like this where I had to create this wonderful meal from almost nothing.

On the H!Diet we eat mostly raw food and as you might already know raw food only stays fresh for 3-4 days, so there are some things we should always have on hand in the fridge and pantry for just this occasion.

Mexican Tortilla Towers

Tortilla Tower

to feed 4 you need 4 eight inch wraps

You will need an assortment of ingredients:

  • 4 flax/corn tortilla wraps
  • 2 cups chopped greens (kale is a good choice because it lasts longer in your fridge than most other greens)
  • 1 cup salsa mixed with 1/2 cup canned diced tomatoes
  • 1 cup seed cheese (I used pumpkin seeds)
  • 1/2 cup of each frozen: peas & corn
  • 1/2 cup any other veggies you have such as celery & sweet peppers

Assembly:

  1. Start with a round flax wrap then spread with 1/2 of your seed cheese
  2. Then add 1/2 of your chopped greens
  3. Add another wrap then spread ½ of your salsa mixture
  4. Sprinkle with the thawed frozen corn
  5. Then add another wrap and spread with the remaining seed cheese
  6. Top this with the rest of your chopped greens
  7. Add the last flax wrap and spread with the salsa
  8. Sprinkle with the thawed frozen peas and whatever diced veggies you have.
  9. Cut into quarters and serve.

This can be made and kept in the fridge for a short time but will become soggy if left too long (we served ours within 30 minutes and it was perfect).

Another serving choice would be to take each wrap and place all the ingredients on top and serve as an individual serving.
