Emergency Creations- a Winter Reminder

Here we are starting another winter and we felt that the video we did last year for Emergency Creations was so to the point that we are repeating it again this year. Continue to read to get the other two recipes found in the video.

During the winter months there are Snow days when we cannot travel with safety and you need to make up something to eat from what you have in your fridge and pantry.

On the H!Diet we eat mostly raw food and as you might already know raw food only stays fresh for 3-4 days, so there are some things we should always have on hand in the fridge and pantry for just this occasion.

Baked Herbed Potatoes: here is the potato recipe we did in the video this week.

Preparation time: 30-40 minutes (including cooking time)

Serving size: (4-6 people)

Method: Take the potatoes and cut them into slices (red potatoes or white table potatoes work best).

Put the following in a 2 quart casserole dish:

  • 4 medium potatoes
  • 1 small yam (or sweet potato)
  • ½ cup chopped green onion
  • 1 tbsp. Italian herbs (or 2 tsp of each: basil & oregano)
  • 2 tbsp. of each: olive oil & water

Toss the above until well coated with oil & herbs, bake in a 400F oven for 30 minutes until tender.

Did you know? Raw potatoes contain easily digested natural sugars that convert to starch when cooked. Potatoes are high in potassium, sulphur, chlorine and phosphorus and have good cleansing benefits. Besides using in a raw juice, there are a variety of methods to cook potatoes such as baking, boiling, or mashing. Potato varieties: white, red, russet, yellow Finn, new, purple, Yukon gold, fingerlings, Bintje.
