Carob Pudding with Berries and Flowers

The Pudding

serves 4

Put the following ingredients into your food processor and blend until creamy:

  • 2 cups unsweetened coconut
  • 2 bananas (peeled)
  • 2 avocados (peeled)
  • ¼ cup maple syrup
  • ¼ cup raw carob powder
  • 1 tsp cinnamon

Put this aside while you make the granola below.

The Granola

makes 2 cups

Put the following into your food processor until crumbly:

  • ½ cup almonds (that have been soaked for 4-8 hours then drained)
  • ½ cup soft dates (soak for 2 hours to soften if hard)
  • ¼ cup rolled oat flakes
  • ¼ cup unsweetened coconut

To assemble: put a scoop of the granola in a dessert bowl – add a scoop of the pudding then surround with a combinations of berries (we have used raspberry, blue-berry & strawberry).

Put in the fridge until ready to serve then sprinkle with mini petunia petals and serve cold.
