The Pudding
serves 4
Put the following ingredients into your food processor and blend until creamy:
- 2 cups unsweetened coconut
- 2 bananas (peeled)
- 2 avocados (peeled)
- ¼ cup maple syrup
- ¼ cup raw carob powder
- 1 tsp cinnamon
Put this aside while you make the granola below.
The Granola
makes 2 cups
Put the following into your food processor until crumbly:
- ½ cup almonds (that have been soaked for 4-8 hours then drained)
- ½ cup soft dates (soak for 2 hours to soften if hard)
- ¼ cup rolled oat flakes
- ¼ cup unsweetened coconut
To assemble: put a scoop of the granola in a dessert bowl – add a scoop of the pudding then surround with a combinations of berries (we have used raspberry, blue-berry & strawberry).
Put in the fridge until ready to serve then sprinkle with mini petunia petals and serve cold.
