Happy Canada Day!
The basic ingredients for this amazing dessert are berries and bananas – since we wanted to welcome in Canada Day we used red berries but any fruit would do.
You need a straight sided glass bowl to make this dessert although it could be made in a loaf pan. The depth needs to be 3-4 inches.
Each layer needs to be frozen before the next layer can be added (at least 3-4 hours to freeze solid)
Here are the 6 layers (See the basic ice-cream recipe below to see how to make each layer):
- Strawberry ice cream – you will need 2 frozen bananas and ½ cup strawberries (see ice-cream directions below)
- Sliced strawberries – about 1 cup
- Banana dreams – you will need 2 frozen bananas with ½ tsp. of each: cinnamon & nutmeg (see ice-cream directions below)
- Raspberry Sherbet – use 1 quart fresh or frozen raspberries alone (see ice-cream directions below)
- Creamed Cashew – 1 cup cashews (that have been soaked for 2 hours then drained) with ¼ cup maple syrup – puree in a food processor until creamed
- Fresh raspberries – use as a garnish on top
Basic Ice-Cream Recipe
Here is the basic recipe for the “ice-cream” we need for this 6 layered dessert. Modify each ingredient to the specifications from each of the above layers.
This is usually made with the blank screen in one of the following juicers: Green Star or Champion. It can also be made easily in a food processor but you will need to add a small amount of water to keep it processing, and the consistency will be more like soft ice cream.
The night before, peel ripe bananas, cut into 1” slices and freeze in an airtight plastic container (or you can freeze them whole and cut them when you take them out of the freezer).
Put the following in your food processor (modify ingredients depending on the layer you are working on):
- frozen bananas (peel ripe bananas, cut into 1″ slices and freeze in an airtight plastic container the night before)
- frozen fruit
- spices (cinnamon, nutmeg, ginger)
- 2-4 tbsp. water
