Asparagus Bok Choy Salad with a Lime Cilantro Dressing

Asparagus Salad

The Salad

serves 2

Put the following ingredients in a large bowl:

  • 2 baby Bok Choy (chopped)
  • 1 zucchini (cut into thin slices and quartered)
  • 8 asparagus spears (cut into bite sized pieces)
  • 1 cup celery (thinly sliced)
  • 1 cup cilantro (chopped)
  • ¼ cup pine nuts

Toss with the following dressing and serve.

The Dressing

makes 1 cup

Blend the following ingredients in your blender:

  • 2 limes juiced
  • ⅓ cup olive oil
  • ½ cup cilantro
  • 1 garlic clove (minced)

This dressing will keep for 4-6 days in the fridge.
