The Salad
serves 2
Put the following ingredients in a large bowl:
- 2 baby Bok Choy (chopped)
- 1 zucchini (cut into thin slices and quartered)
- 8 asparagus spears (cut into bite sized pieces)
- 1 cup celery (thinly sliced)
- 1 cup cilantro (chopped)
- ¼ cup pine nuts
Toss with the following dressing and serve.
The Dressing
makes 1 cup
Blend the following ingredients in your blender:
- 2 limes juiced
- ⅓ cup olive oil
- ½ cup cilantro
- 1 garlic clove (minced)
This dressing will keep for 4-6 days in the fridge.
