Coconut Flower Cookies

Coconut Cookies

We bought some coconuts and opened them up and took the hard coconut out to use in a cookie recipe. We then put the coconut through our Champion Juicer using the blank solid screen to grind up the coconut into a fine crumble (it made about 3 cups).

When you garnish with flowers make sure they are edible (complete list of edible flowers here) and if you grow them yourself make sure you do not use chemicals so you can eat them! Stay away from these flowers when using them in your food: Poisonous plants and flowers

The cookie dough

makes 24-36 heart shaped cookies

Put the following into your food processor and process until thick and creamy:

  • 3 cups coconut crumble
  • 6 dates (that were soaked overnight then drained)
  • ¼ cup maple syrup
  • 1 tsp cinnamon
  • 1 cup fresh pineapple pieces
  • 1 orange broken into sections
  • ½ cup freshly ground flax seed

We used heart shaped cookie molds to make the cookies – you can buy these at a Dollar store and they come in six cookies to a mold.

Place some orange and yellow petals in each cookie mold then carefully fill with the thick cookie dough.

Place the filled molds in the dehydrator and dehydrate overnight at 105F

In the morning turn the cookies out of the molds onto the fine mesh screen and put back in the dehydrator

Dehydrate all day until they are the consistency you like – we did them for 10 hours.
